Mashed potatoes:

How to make the best bird's nest eggs:

In a pressure cooker, add two cups of water and potatoes.

Pressure cooker for 6 whistles.

Once the pressure has settled, remove the potatoes, peel and mash them. Put this aside.

In a saucepan, add 1 cup of water and green peas and cook for 3 minutes. Drain the green peas and set aside.

Grind ginger and green pepper and add some water to a soft paste to prepare ginger green pepper paste.

Boil 2 cups of water, add eggs and cook for 9 minutes. Remove from heat, cool eggs and remove the shell.

Cut the eggs in half, remove the yolk, and leave the yolk aside.

Mix the algae with water to form a maida paste.

In a bowl, add the cooked green peas, onions, red pepper powder, dry mango powder, and salt. Mix well.

Put the pea mixture inside the egg in the place of the egg yolk.

Place the white flour paste on the inner side of the eggs and stick the sliced ​​eggs vertically.

Take the mashed potatoes and add salt, ginger, green pepper paste, garam masala, and egg yolks that were set aside. Mix well.

Cover the egg with the mashed potato mixture. Shape into a ball and make sure the potato mixture is evenly distributed around the eggs.

In a bowl, beat the remaining eggs. In another bowl we take the vermicelli.

Brush the potato ball with the beaten egg, then roll it into the vermicelli.

In a deep frying pan, add oil. Once the oil warms up, deep fry it until golden brown or for 3 minutes.

Cut the balls in half and serve with tomato sauce.
